Once coffee is harvested it must be milled the same day to preserve the quality of the coffee's flavor. Milling is done right on our own farm at the beneficio which is Spanish for coffee mill.

Coffee arrives at the mill as fruit we call cherry or cereza and is ready to be processed. The first step is to destone the fruit in order to protect machinery.
