The
next step is to dry the coffee. We drain the water
from the tanks, remove the clean coffee beans and
spread them on a concrete patio
for sun drying.
Seven full days of sunshine and frequent stirring
are needed before reaching the desired 11% to 12%
moisture content.
To determine
whether the coffee is dry you can roll some beans
together in your hand and see how easily the
parchment falls away from the bean. A well dried
bean should
be an intense blueish-green.
At this
point we store our coffee in its white parchment
shell to protect it from ambient humidity. Once
coffee is dry it cannot be allowed to pick up humidity.
Needless to say, this will ruin the quality and
taste of your coffee. |
